Offbeast, a Baltimore-based company, has developed a groundbreaking manufacturing process that enables the creation of whole cuts of meat containing a 50:50 blend of beef and plant-based ingredients. ## Introduction to Whole Cut Engineering Offbeast's "whole cut engineering" technology is designed to integrate into existing meat-processing lines, allowing companies to produce hybrid whole cuts without requiring additional equipment. The process involves transforming unstructured meat into aligned, muscle-like fibers, which are then connected by a plant-based binder. This technology has already been tested at production scale, with a capacity of up to three metric tons per shift.
According to Offbeast's cofounder and CEO, Insa Mohr, the company's technology can increase typical beef margins by two to four times while enabling a lower consumer price. Mohr claims that 16 out of 20 testers in a recent taste test rated the blended beef tips as "indistinguishable from conventional meat," with texture receiving particularly strong feedback.

The current hybrid trend is arguably different from previous extenders, as firms are blending meat with a wider range of ingredients at higher inclusion levels.
The fact that blended meat can help clients meet ESG goals and cut saturated fat and sodium while boosting fiber is a significant advantage.
