Tufts University Opens Shared R&D Facility for Cultivated Meat and Alternative Protein Developers

Tufts University has opened a shared-access research and development center for food technology companies and researchers.

Tufts University has opened the Innovation Hub for Food and Materials, a shared-access research and development center in Medford, Massachusetts. The facility is designed to provide infrastructure for prototyping, testing, and scaling products for food technology companies and researchers.

The Innovation Hub targets a bottleneck in alternative protein development, where smaller companies and academic teams often stall between a promising lab result and a commercial product. This is due to the high cost and limited accessibility of pilot-scale equipment for bioprocessing, formulation, and sensory testing.

Tufts is backing the project with a $4.6 million investment, supplemented by a $2.1 million grant from the Massachusetts Technology Collaborative (MassTech) and additional philanthropic support. Interim space is available now, with the fully equipped 17,000-square-foot facility scheduled to open in fall 2026.

What the site provides

The Innovation Hub offers a range of facilities and services, including cell culture, bioprocessing, food and material formulation, and scale-up production capacity. It houses a cell bank spanning animal and insect cells alongside a plant cell repository, which is described as the world’s most extensive, with more than 2,000 species.

A test kitchen and sensory analysis suite allow developers to evaluate products with chef and consumer input across the development cycle. A BioLabs-operated incubator at 200 Boston Avenue adds 46 laboratory benches with co-working space for early-stage biotech companies.

Beyond food, the Hub supports biomaterials work for medical, textile, and agricultural applications, and offers a “technology sandbox” where suppliers of bioreactors, extrusion equipment, and characterization tools can test and refine components in an integrated setting.

Addressing the gap between lab and market

David Kaplan, Stern Family Endowed Professor of Engineering and director of the Tufts University Center for Cellular Agriculture (TUCCA), framed the facility as a response to a recurring request from both sides of the field.

“We’ve consistently heard from both researchers and industry that there is a need for shared infrastructure to move ideas forward,” Kaplan said.

He described a client base without a single profile, stating that the Innovation Hub is designed to meet the needs of academics looking to commercialize a new innovation, small companies that may not have the resources to test manufacturing capabilities, larger companies focused on production that would like to explore new products or technologies, or anyone that might be missing even a small part of the process to bring a product from idea to market.

The Innovation Hub draws on Tufts’ School of Engineering and its Friedman School of Nutrition Science and Policy, and connects to the Tufts University Center for Cellular Agriculture (TUCCA), the interdisciplinary center established in 2022. It is also integrated with the Tufts Food & Nutrition Innovation Institute.

The facility is open to commercial, academic, and nonprofit partners, and covers everything from novel ingredient development through early-stage consumer testing.
